Badam Burfi
Ingredients:
1 cup Badam (Almonds)
2 cups of sugar
3/4 cup ghee
1 cup of water
Few strands of saffron
Method:
Soak Badam(Almond) in warm water overnight. Next day peel off the skin and grind it into smooth paste adding little water and milk. Soak the saffron in some warm milk. Take a deep bottomed pan. Then add sugar and water and bring it to boil. When the sugar gets melted add the ground paste of badam and stir it nicely with a little bit of ghee in between. Add saffron and keep on stirring till the whole mixture leaves bottom and side of the pan and becomes a lump. Remove it from gas and spread it on a plate smeared with ghee. Cut it into required shape or pieces.
